Serving Size: Makes 4 to 5 servings

AmountIngredient
1 cuplong grain brown rice
2 cupscubed cooked turkey
1 cupcooked peas
2/3 cupsliced green onions, whites and part of green
1/2 cupsliced toasted almonds
Gingered Dressing: 
1/3 cupsalad oil
3 tablespoonswine vinegar
1 teaspoonblack pepper
1/2 teaspoonsalt
2 teaspoonsgrated fresh ginger

Preparation Instructions:

1. Cook the rice according to the package directions.

2. When rice is cooked and still hot, combine with turkey, peas green onions and almonds. Place in a large bowl.

3. Combine the dressing ingredients.

4. Pour dressing over the warm salad. Toss gently. Serve while warm or at room temperature.

Per serving: 340 calories; 22.1 g fat; 18.8 g protein; 17.6 g carbohydrate; 402 mg sodium.
