"Herb Glazed Chicken with Lemon Relish"

Serving Size: Makes 4 servings

Preparation Instructions:1. Rinse chicken. Pat dry.
2. In a saucepan, heat butter. Saute the onion until soft.
3. Stir in thyme, salt, pepper, wine or broth and honey. Simmer, uncovered, for 5 minutes.
4. Dip chicken pieces in sauce. Arrange on a broiler rack, bone side up.
5. Broil for 12 minutes. The chicken should be about 5 inches from heat. The broiler can be set at high, but lowered to medium (425 degrees) if chicken cooks too fast. Brush with any remaining sauce, while cooking.
6. Turn. Broil another 12 to 14 minutes.
7. When chicken is done, serve spooned with the lemon relish.
Lemon Relish: Grate rind from lemon. Place all ingredients in food processor. Peel off all remaining peel from lemon. Remove seeds. Place lemon in processor with mixture. Process briefly until coarsely combined.
