"BC Hothouse Saute with Mushrooms"

Serving Size: Makes 6 servings

AmountIngredient
1 tablespooncooking oil
2red peppers, chopped
2orange peppers, chopped
1/2long English cucumber, chopped
1small onion, chopped
1/3 cupItalian dressing
1 1/2 cupssliced mushrooms
2tomatoes, cut in wedges
1 teaspoonmarjoram
 Salt, to taste
 Pepper, to taste

Preparation Instructions:

Heat oil in a large skillet at medium heat. Add peppers, cucumbers and onion. Saute 2 minutes until lightly brown. Add mushrooms and dressing. Saute about 4 minutes more until nearly tender. Add tomatoes, marjoram, salt, and pepper. Saute until tomatoes are heated through. 6 servings.
