"Olvera Street Chili Quiche"
Quiches, Crepes and Other Greats from Great American Recipes
Serving Size: Makes 6 to 8 servings

Preparation Instructions:1. Brush the pastry shell with a little of the egg white from the 2 eggs. Let dry.
2. In a bowl, combine the eggs, half and half or milk, cumin, salt, pepper flakes, and green chilies.
3. Pour into the pastry shell, making sure that the green chilies are evenly distributed in the dish.
4. Sprinkle with the jack and cheddar cheeses.
5. Bake at 375 degrees for 25 to 30 minutes or until the quiche is set. Do not overcook.
6. Serve hot or warm, garnished with diced fresh tomato, if desired.
Per serving: 236 calories; 7.7 g protein; 16.4 g fat; 14.7 g carbohydrates; 310 mg sodium.
