Gooseberry Clafouti

AmountIngredient
1 1/2 poundsgooseberries
3large eggs
3 tablespoonsplain flour
pinchsalt
4 tablespoonscaster sugar
1/2 pintlukewarm milk
1 ounceunsalted butter

Preparation Tips:

Top and tail the gooseberries and rinse them. Dry them well on a tea towel. Beat the eggs, then blend in the flour and salt and stir in 3 tablespoons sugar. Pour on the lukewarm milk, whisking all the time. Use the butter to grease a large shallow 2 pint ovenproof dish very well. Put the gooseberries in one layer in the dish and pour on the batter. Bake in a 425 degree oven for about 55 minutes or until the gooseberries have risen to the top and the batter is set and golden. Sprinkle with the remaining sugar and serve warm.
