"Penne with Chicken, Ham and Olives"

AmountIngredient
1 tablespoonolive oil
1/4 cupchopped green bell peppers
1 clovegarlic, minced
6 ouncesboneless, skinless chicken breast, grilled and diced
1/2 cupdiced cooked ham
6stuffed green olives, quartered
6black olives, quartered
1 tablespoonherbal or white wine vinegar
1/4 cupnonalcoholic white wine
 Oregano
8 ouncespenne pasta
1/8 cupcubed Muenster cheese

Preparation Instructions:

In a large nonstick skillet, heat oil over medium heat. Add peppers and garlic, and saute until peppers are soft but not browned. Add chicken, ham, olives, vinegar, and wine. Add oregano to taste. Cover, and simmer for 5 minutes.

Cook penne according to package directions. Toss hot penne with cheese and chicken mixture. Serves 4.

Per serving: 353 calories; 8.9 g fat; 38 mg cholesterol; 470 mg sodium; 1.6 g fibre.
