Serving Size: Makes 8 servings

AmountIngredient
1 tablespoonvegetable oil
1onion, chopped
2 clovesgarlic, minced
2 stalkscelery, sliced
1green pepper, cored and chopped
2 cupssliced smoked sausages, (mild or hot)
1 cupUncle Ben's Converted rice
28 ounce candiced tomatoes
4 cupschicken broth (or water)
1/2 teaspooncayenne pepper, or to taste
 Chopped parsley (optional)

Preparation Instructions:

1. Heat oil in a large saucepan. Add onion and garlic; saute 2 to 3 minutes.

2. Add celery, pepper, sausages and rice. Cook over medium heat 5 minutes.

3. Stir in tomatoes, broth and cayenne pepper. Bring to a boil, reduce heat, cover and simmer 20 minutes. Season to taste. If desired, sprinkle with parsley. Makes 10 cups or 8 servings.

Per serving: 253 calories; 11 g protein; 11.1 g fat; 27.9 g carbohydrates; 1.8 g dietary fibre.
