Banana Nut Pancakes

Preparation Tips:Mash the bananas to a pruee with a fork, then mix with the sugar and double cream. Crush the nuts and toast them lightly under the grill, turning them all the time. Allow to cool and mix with the banana. Sift the flour and salt into a bowl. Make a well in the center and add the egg. Mix to a smooth batter with the milk then gradually whisk in 1/4 pint cold water. Melt 1/4 ounce knob of lard in a small frying pan and when it is very hot pour in a little of the batter. Cook for 1 minute until golden brown on the underside, then toss or turn and cook for anouther minute. Make 7 more pancakes in the same way, using the remaining lard. Fold each pancake into quarters and spoon some of the banana nut filling inside the pocket. Arrange on a hot dish and serve at once.
