"Amaretti Baked Peaches with Mascarpone"

Serving Size: Makes 8 servings

AmountIngredient
8large ripe peaches, peeled, halved and cored
1/2 cupbutter, melted
1/4 cupalmond flavoured liqueur
1 cupcoarsely crushed amaretti cookies
1/2 cuppacked brown sugar
1 cupmascarpone cheese or cream cheese
1/2 cupsliced almonds, toasted

Preparation Instructions:

Arrange peaches, cut side up, in large shallow greased baking dish. Stir butter with liqueur; pour over peaches. Mix cookies with sugar; spoon into cavities.

Bake in 375 degree oven for about 25 minutes or until tender. To serve, dollop with mascarpone; sprinkle with almonds. Makes 8 servings.

Per serving: about 446 calories; 4 g protein; 31 g fat; 39 g carbohydrates; 2 g fibre; 74 mg cholesterol; 127 mg sodium.
