New England Boiled Dinner

Serving Size: Makes 8 servings

AmountIngredient
3 to 4 poundcorned beef brisket
8small onions
8medium carrots
4potatoes, pared and halved or quartered
2turnips, cubed, if desired
1medium green cabbage, cut into wedges
 Caraway seed

Preparation Instructions:

Place brisket in large kettle; cover with cold water. Cover tightly; simmer 3 1/2 hours or until tender. Skim fat from liquid. Add onions, carrots, potatoes and turnips. Sprinkle with caraway seed. Cover; simmer 20 minutes. Remove meat to warm platter. Add cabbage; simmer uncovered 10 to 15 minutes longer or until vegetables are tender. 8 servings.
