Grandma's Macaroni Bake

AmountIngredient
1 1/2 cupsuncooked elbow macaroni
 Boiling salted water
2eggs, beaten
1 cupmilk or half-and-half
1 tablespoonall-purpose flour
1 teaspoonsalt
 nutmeg, optional
1/2 cupshredded sharp Cheddar cheese
1/2 cupdiced cooked ham
2 tablespoonschopped parsley
1red, green, or yellow bell pepper, sliced
 Fresh herbs, optional

Preparation Tips:

1. Cook macaroni according to package directions in salted water. Drain well.
2. In a bowl, whisk together eggs and milk or half-and-half.
3. Add flour, salt and nutmeg, if used. Add macaroni.
4. Stir in cheese and ham.
5. Pour mixture into a lightly greased ring mold or baking dish.
6. Spinkle with parsley and bell pepper. Add fresh herbs, if desired.
7. Bake at 375 degrees F. for about 35 to 40 minutes until mixture is set and has a light brown color.
8. Serve with either sliced tomatoes or a bowl of fresh green salad.
Tip: This everyday dish can be varied in many ways. Add diced tomatoes, sliced green onions or leek or grated carrots according to preference.
