"Holiday Potato Scallop"

AmountIngredient
6 cupspeeled, sliced potatoes (1/8 inch thick)
1/4 cupsliced green onions
3 tablespoonsall purpose flour
1/2 teaspoonsalt
1/4 teaspoondried thyme leaves
Pinchwhite pepper
2 cupshalf and half
1/3 cupsnipped fresh parsley
 Sliced pimiento

Preparation Instructions:

In a 3 quart casserole, combine all ingredients, except half and half, parsley, and pimiento. Pour half and half over potatoes mixture. Toss gently to coat. Cover. Microwave at High for 6 minutes. Microwave at 50% (Medium) for 25 to 40 minutes longer, or until potatoes are tender and sauce is thickened, stirring twice. Spoon potatoes into serving dish. Sprinkle parsley over potatoes. Arrange pimiento on top.

Holiday Au Gratin Potatoes: Stir in 1 cup shredded Swiss cheese at end of cooking time. Cover. Let stand for 1 to 2 minutes, or until cheese melts.
