Preparation Instructions:Remove and discard the skin from chicken breasts. Halve breasts lengthwise, remove and discard bones. Cut chicken into 1 inch pieces.
In a bowl combine soy sauce and five spice powder; stir in chicken pieces. Let stand at room temperature 15 minutes.
Stir together sugar and cornstarch; stir in water and vinegar. Set aside.
In a wok or large skillet heat oil. Add chopped peppers; stir fry 2 minutes. Add gingerroot; stir fry 30 seconds more.
Add sweet potato strips, sliced mushrooms and cut up green onions. Stir fry 3 to 4 minutes or just till tender; remove from wok.
If necessary, add additional oil. Add half of the undrained chicken mixture to the wok; stir fry 2 minutes. Remove. Stir fry remaining chicken mixture 2 minutes. Return all chicken mixture to wok.
Stir cornstarch mixture and stir into chicken. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Stir in vegetables. Cover and cook 1 minute. Makes 4 servings.
