"Saucy Carrots"

Serving Size: Makes 6 servings

AmountIngredient
6large carrots
1/4 cupbutter
 Salt and pepper
1/4 cupprepared mustard
1/2 cuphoney
2 tablespoonschives or parsley

Preparation Instructions:

Cut carrots into 1 inch diagonal slices (about 3 cups). Cook in boiling water until crisp tender; drain. In small pot melt butter, spices, mustard, and honey. Cook, stirring, about 3 minutes; add the desired greens. Mix sauce gently with carrots. Heat for a few minutes. Serve warm. Serves 6.
