Diane's Butter Tarts

AmountIngredient
Pastry 
4 cupsflour
1 teaspoonsalt
1/2 teaspoonbaking powder
1/2 teaspoonbaking soda
4 tablespoonsbrown sugar
1 poundlard
1egg, beaten
1 tablespoonvinegar
1 - 2 tablespoonscold water
Filling 
1 cupbutter
4 cupsbrown sugar
4 cupsraisins
2 teaspoonsvanilla
4eggs, well beaten

Preparation Tips:

Combine flour, salt, baking powder, baking soda, and brown sugar. Mix well. Add lard to mixture. Cut in with a knife.
Beat together egg, vinegar and water. Add to mixture
Roll out pastry and line muffin tins.
Mix together filling ingredients. Fill muffin tins lined with pastry 1/2 full only.
Bake at 375 - 400 degrees for about 20 minutes.
