Egyptian Lemon Chicken

AmountIngredient
2small chickens, cut into serving size pieces
4 tablespoonsolive oil
grated rind and juice of 1lemon
1minced garlic clove
1/2 teaspoonthyme
 salt
 pepper
 butter
2 tablespoonsfinely chopped parsley

Preparation Tips:

Place chicken in shallow bowl. Sprinkle with olive oil, garlic, lemon rind, lemon juice, thyme, salt and pepper. Marinate for at lest 2 hours, turning occasionally. Place chicken and marinade in buttered baking dish. Bake at 350 degrees for 1 hour or until tender, basting frequently. Remove from oven and sprinkle with parsley. Serve immediately. Yield: 6 servings.
