Serving Size: Makes about 3 dozen cookies

1/2 cupsugar
3/4 cupbutter, softened
1egg yolk
1 teaspoonalmond extract
1 1/2 cupsall purpose flour
1/4 cupunsweetened cocoa
 Semi sweet real chocolate chips, melted or vanilla flavored candy coating, melted for coatings
 Finely chopped almonds, pecans or walnuts; candy coated milk chocolate pieces; flaked coconut; fruit preserves; colored sugars and multi colored decorator candies for toppings

Preparation Instructions:

Heat oven to 375 degrees. In large mixer bowl combine sugar, butter, egg yolk and almond extract. Beat at medium speed, scraping bowl often, until mixture is light and fluffy, 2 to 3 minutes. Continue beating, gradually adding flour and cocoa, until well mixed, 2 to 3 minutes. Shape rounded teaspoonfuls of dough into 1 inch balls. Place 1 inch apart on ungreased cookie sheets. Shape as desired (logs; flatten with sugar dipped, buttered glass; thumbprint or depression in center; etc.). Bake for 7 to 9 minutes or until set. Cool completely. Decorate cookies with suggested coatings and toppings, as desired. Makes about 3 dozen cookies.
