Serving Size: Makes 3 servings

1/2 poundItalian sausage, mild or hot
3green onions, sliced
1medium apple, sliced
1 cupsliced mushrooms
2 teaspoonsWorcestershire sauce
1 teaspoondry mustard
6eggs
2 tablespoonswater
1/4 teaspoonsalt
2 tablespoonsbutter

Preparation Instructions:

Remove sausage from casing and crumble. In 9 inch frying pan, saute sausage until browned. Stir in green onions, apple and mushrooms and saute 3 to 4 minutes. Stir in Worcestershire sauce and mustard. Remove from pan, keep warm.

Blend eggs, water and salt lightly with fork. Heat 2 teaspoons butter in pan. Pour 1/3 egg mixture into pan. Carefully draw cooked portions towards center so that uncooked egg flows underneath. Cook until set. Spoon 1/3 sausage mixture over half of omelet. Fold other half omelet over top and slide out of pan. Repeat twice more with remaining ingredients. Serve immediately. Makes 3 servings.
