"Roasted Tropical Fruit Kabobs"

Serving Size: 4 skewers

About 2 cupscombination of mango, pineapple, banana, and kiwi (or substitute peaches, apricots, apples, and pears)
2 tablespoonsbrown sugar
2 teaspoonsbutter
2 teaspoonslime juice

Preparation Instructions:

Choose a combination of fruits. Use firm, ripe fruit and cut into large cubes. Thread fruit onto 4 small wooden skewers. Arrange in baking dish. In small microwaveable bowl, combine brown sugar, butter, and lime juice. Microwave on High for 30 to 45 seconds or until melted; stir well. Brush over kabobs. Roast in 400 degree oven for 8 to 10 minutes, turning once, until fruit is just tender.

Per kabob: 99 calories; 2 g fat; 21 g carbohydrates; 0.6 g protein; 2 g fibre.
