Hearty Scrambled Egg Fajitas

Serving Size: Makes 4 servings

1 tablespoonvegetable oil
1medium onion, thinly sliced
1 eachmedium red and green pepper, cut into thin strips
2 - 3 teaspoonschili powder
2 cartons (250 ml each)Omega Pro or Break Free liquid eggs, well shaken (or 10 shell eggs)
1/2 teaspoon eachsalt and pepper
8soft flour tortillas

Preparation Instructions:

1. In large non stick skillet, heat oil over medium high heat. Saute onion and peppers with 1 teaspoon chili powder 5 minutes.

2. Add liquid eggs, salt, pepper and remaining chili powder (to taste). Cook and stir over medium heat until eggs are softly set, about 5 minutes.

3. Heat tortillas in microwave oven, if desired. Fill with egg mixture, fold up one side of tortilla and then roll up. Serves 4.

Tip: Add favourite toppings on fajitas before rolling up: shredded low fat Monterey Jack or cheddar cheese, chopped coriander or parsley, salsa, light sour cream, chopped tomatoes.
