Caramelized Onions on Garlic Buttered Crostini

1/4 cupbutter, melted
1 clovegarlic, minced
24 (1/2 inch) slicescoarse textured baguette
8 ouncesMozzarella, thinly sliced
 Hot peppers, chopped
Caramelized Onions: 
3 tablespoonsbutter
3large onions, cut into thin wedges
1/4 cupwater
1 1/2 teaspoonssugar
 Salt and pepper to taste

Preparation Instructions:

1. Combine butter and garlic; add salt and pepper to taste. Brush on 1 side of each bread slice.

2. Place bread directly on preheated grill buttered side down. Cook, with lid open, over medium heat until lightly toasted, about 2 or 3 minutes.

3. Arrange the bread slices, toasted side up, on foil lined baking sheets. Top each with Mozzarella and about 1 tablespoon Caramelized Onions.

4. Place each baking sheet on grill and cook, with lid closed, over medium heat until underside of bread is toasted, about 3 or 4 minutes. Garnish with hot peppers. Serve immediately.

Caramelized Onions: Melt butter in large non stick frypan. Add onions and toss to coat. Cook and stir over medium high heat until browned, about 5 minutes. Add water and sugar to pan, reduce heat to medium and cook, stirring occasionally, until liquid has evaporated and onions are tender and very brown, about 10 minutes. Add salt and pepper to taste.

Per serving: 107 calories; 3.7 g protein; 6.1 g fat; 9.4 g carbohydrates.
