250 - 270 gbaguette loaf
227 g packageClover Leaf Crab Delight, flake style, chopped
1/2 teaspoongrated lemon rind
1 tablespoonlemon juice
1/4 cuplight sour cream
2 tablespoons eachchopped chives (or green onion) and parsley
 Salt and pepper
250 g packageLactantia Light Ultra Spreadable Mediterranean Salsa Cream Cheese

Preparation Instructions:

Cut baguette into 30 1/2 inch thick slices. Place on large baking sheet. Bake at 425 degrees 5 to 7 minutes or until lightly browned and crisp. Cool.

Combine crab, lemon rind and juice, sour cream, chives and parsley. Add salt and pepper to taste.

Spread each bread slice with a heaping teaspoon of cream cheese. Top with crab mixture. Makes 30 appetizers.

Hint: To prepare ahead, store toasted bread slices in airtight container. Crab mixture may be prepared and stored, covered, in refrigerator. Assemble at serving time.

Per appetizer: 51 calories; 2.1 g protein; 1.8 g fat; 6.7 g carbohydrates; 3 g dietary fibre.
