3 poundLondon broil
Marinade: 
2 tablespoonsolive oil
2 tablespoonslemon juice
Filling: 
4 ouncescream cheese, softened
2 tablespoonsblue cheese, crumbled
1/2 tablespoonfresh thyme leaves, minced
1 tablespoonfresh basil leaves, minced
1/2 tablespoonfresh oregano leaves, minced
1 tablespoonfresh chives or green onion, minced
2 clovesgarlic, minced
1 teaspoonsalt
1/2 teaspoonpepper

Preparation Instructions:

1. Cut a lengthwise pocket in steak.

2. Marinate in the olive oil and lemon juice for 1 to 2 hours at room temperature.

3. Mix together softened cream cheese with blue cheese, fresh herbs, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

4. Stuff pocket with herbed cheese mixture. Fasten with toothpicks.

5. Sprinkle steak with remaining salt and pepper.

6. Place steak in a large roasting pan or jelly roll pan lined with foil.

7. Broil about 3 inches from heat for 5 to 6 minutes on each side, or until cooked to desired doneness.

8. Slice in thin diagonal slices against the grain.

9. Serve immediately.
