Serving Size: Makes 6 servings

340 g canSpam luncheon meat, cut in strips
2 cupscooked brown, white or wild rice
1yellow pepper, chopped
1/2 cupchopped carrots
1/2 cupcoarsely chopped pecans, toasted
1/2 cupgolden raisins
Sherry Chive Vinaigrette: 
1/3 cupolive oil
2 tablespoonssherry or red wine vinegar
1/4 cupsnipped fresh chives
1 tablespoonchopped fresh parsley
1 clovegarlic
1/4 teaspoonfreshly ground pepper

Preparation Instructions:

In large bowl, combine all ingredients. Cover and chill 4 hours or overnight. Serves 6.

Sherry Chive Vinaigrette: In blender or food processor combine all vinaigrette ingredients. Cover and process until chives are minced.

Per serving: 482 calories; 35.4 g fat; 10.4 g protein; 30.8 g carbohydrates; 2.8 g dietary fibre.
