1 poundbeef shanks, oxtails, short ribs, or veal bones
14 1/2 ounce cantomatoes
2carrots, sliced
2 to 3 stalkscelery with tops, sliced
2medium onions, diced
1 to 2medium potatoes, pared and diced
3 cupswater
4whole peppercorns
3beef bouillon cubes
10 ounce packagefrozen mixed vegetables, peas, or lima beans

Preparation Instructions:

Put all ingredients in crockpot. Cover and cook on Low 12 to 24 hours (High 4 to 6 hours). Frozen vegetables may be added during last 2 hours of cooking if desired.
