Layered Potato Surprise

Serving Size: Makes 4 to 6 servings

4 to 5medium boiling potatoes, unpared
 Boiling, salted water
2 1/2 ounce packagethinly sliced smoked beef
1/2 poundraclette, milk brick cheese, or cheddar cheese, sliced
 Sliced dill pickle, for garnish, optional
 Chopped parsley, for garnish, optional

Preparation Instructions:

1. Cook the potatoes until tender in boiling, salted water that just covers potatoes. Drain. Cool until you can handle them.

2. Meanwhile, butter an 8 or 9 inch shallow pie pan or quiche pan.

3. Line the pan with smoked beef, bringing the beef slices about 1/2 inch up the sides of the pan. (The beef may be omitted, if desired, but adds good flavor).

4. Peel and cut the potatoes into 1/2 inch slices. Arrange over the beef.

5. Arrange the slice cheese over the top.

6. Just before serving, broil, 4 inches from the source of heat for 2 to 3 minutes until the cheese is melted and bubbly.

7. Garnish with chopped parsley or sliced pickle, if desired.

Per serving: 233 calories; 12.7 g protein; 11.8 g fat; 19.3 g carbohydrates; 365 mg sodium.
