Serving Size: Makes 8 servings

3 1/4 cupsmini marshmallows
1/3 cupfrozen orange juice concentrate (undiluted)
1 1/2 teaspoons eachgrated lemon and lime rind
3 tablespoons eachlemon and lime juice
1 1/4 cupssour cream, regular or light
3/4 cupwhipping cream
1graham cracker pie crust

Preparation Instructions:

In large microwaveable bowl, combine marshmallows and orange juice concentrate. Microwave on High 2 to 3 minutes; stir until smooth. Add citrus rind and juices and sour cream. Refrigerate until partially set (approximately 30 to 45 minutes).

Beat whipping cream until stiff; fold into citrus mixture. Pour into crust. Refrigerate until set, about 3 hours. Garnish with fresh fruit and citrus zests, if desired. Serves 8.

Per serving: 313 calories; 3.3 g protein; 18 g fat; 37 g carbohydrates; 0.9 g dietary fibre.
