Preparation Instructions:In large microwaveable bowl, combine marshmallows and orange juice concentrate. Microwave on High 2 to 3 minutes; stir until smooth. Add citrus rind and juices and sour cream. Refrigerate until partially set (approximately 30 to 45 minutes).
Beat whipping cream until stiff; fold into citrus mixture. Pour into crust. Refrigerate until set, about 3 hours. Garnish with fresh fruit and citrus zests, if desired. Serves 8.
Per serving: 313 calories; 3.3 g protein; 18 g fat; 37 g carbohydrates; 0.9 g dietary fibre.
