"Crispy Zucchini Chips"

Serving Size: Makes 8 servings

AmountIngredient
1/4 cupunbleached flour
1/2 teaspoondried oregano
1/4 teaspoongarlic powder
1/8 teaspoonground red pepper
2egg whites
2 tablespoonscornflake crumbs
1/4 cupgrated Pamesan cheese
2zucchini, cut into 1/4 inch slices

Preparation Instructions:

Preheat oven to 350 degrees.

Combine flour, oregano, garlic powder, and red pepper in a self sealing plastic food storage bag.

Whisk egg whites and water in a pie plate.

Combine crumbs and Parmesan cheese in another plastic bag.

Shake zucchini in flour mixture until slices are coated. Dip slices into egg white mixture. Then shake in crumb mixture. Place slices in a single layer on the baking sheet.

Bake for 10 minutes. Turn slices. Bake an additional 8 minutes until golden brown. Serves 8.

Per serving: 68 calories; 1.0 g fat; 3 mg cholesterol; 153 mg sodium; 0.6 g fibre.
