Herbed Tofu Lasagna

AmountIngredient
350 gherbed tofu or extra firm tofu
2 tablespoonsextra virgin olive oil
1onion, sliced
1carrot, sliced
1red bell pepper, sliced
1zucchini, sliced
2 cupsmushrooms, sliced
796 ml cancrushed tomatoes
796 ml candiced tomatoes
2 cupsmozzarella or soy cheese, grated
2 teaspoonsItalian herbs - 4 teaspoons if using plain tofu
1 teaspoonbasil
1 teaspoon eachsalt and pepper
1 boxoven ready lasagna

Preparation Instructions:

Preheat oven to 350 degrees. Heat the oil in a large pot and cook the onion and tofu for five minutes until the onion is soft. Add vegetables and cook for five minutes more. Add the cans of tomatoes and herbs, basil, salt, and pepper. Bring to sauce to a boil and simmer for 10 to 15 minutes. Pour three cups of the sauce on the bottom of a large baking pan. Cover with the lasagna sheets. Repeat twice and top with cheese. Bake for 30 minutes. Cool for 10 minutes before serving.
