"Herbed Tofu Lasagna"

Preparation Instructions:Preheat oven to 350 degrees. Heat the oil in a large pot and cook the onion and tofu for five minutes until the onion is soft. Add vegetables and cook for five minutes more. Add the cans of tomatoes and herbs, basil, salt, and pepper. Bring to sauce to a boil and simmer for 10 to 15 minutes. Pour three cups of the sauce on the bottom of a large baking pan. Cover with the lasagna sheets. Repeat twice and top with cheese. Bake for 30 minutes. Cool for 10 minutes before serving.
