1/2 poundfresh broccoli
1/2 poundlean, boneless sirloin steak
1/2 teaspoonWorcestershire sauce
1/4 cupwater
1/4 teaspoonbeef flavored bouillon granules
1/2 cupplain low fat yogurt
1/4 cupcoarsely crumbled blue cheese
1/4 cupchopped fresh dill sprigs
2 tablespoonsprepared horseradish
4 ouncesuncooked farfalle (bow tie pasta), cooked without salt
1small yellow squash, julienne cut
2large tomatoes, thinly sliced

Preparation Instructions:

Cut broccoli into flowerettes; slice stalks 1/4 inch thick. Cook broccoli, covered, in boiling water 2 minutes; drain. Rinse under cold water; drain and set aside. Brush steak with Worcestershire sauce. Cook beef in a skillet over high heat about 3 minutes on each side; remove from pan, reserving drippings. Slice beef diagonally across grain; cover and chill. Add water and bouillon granules to reserved drippings. Bring to a boil; remove from heat, and let stand 5 minutes. Combine bouillon mixture, yogurt, and next 3 ingredients in container of an electric blender; cover and process until smooth. Combine horseradish mixture, pasta, broccoli, and squash. Cover and chill 2 hours. Line serving plates with tomato slices. Spoon pasta mixture over tomatoes, and top with meat. 4 servings.

Per serving: 294 calories; 23.1 g protein; 33.1 g carbohydrates; 8.2 g fat; 47 mg cholesterol; 309 mg sodium.
