"Chicken Pesto Pasta"

Serving Size: Makes 4 servings

AmountIngredient
1/3 cupreduced fat pesto sauce
1 cupdefatted reduced sodium chicken broth
10 ounce packagesliced roasted chicken breast
9 ounce packagefresh fettuccine
 Black pepper
2large tomatoes, chopped

Preparation Instructions:

In a large skillet, mix pesto sauce and 3/4 cup broth. Add chicken and mix well. Cover and cook over medium heat for 5 minutes, stirring occasionally.

Meanwhile, cook fettuccine according to package directions. Place in a large bowl, and toss with remaining 1/4 cup broth. Season with pepper. Add chicken mixture and toss to coat. Serve with tomatoes. Serves 4.

Per serving: 241 calories; 2.2 g fibre; 8.1 g fat; 64 mg cholesterol; 837 mg sodium.
