Glazed Walnuts

Serving Size: Makes 2 cups

AmountIngredient
2 cupsshelled walnuts
1/2 cupgranulated sugar
1/2 cupbrown sugar, packed
1/2 cupwater
1 teaspoonvanilla extract

Preparation Instructions:

1. If you like, you may toast the walnuts before glazing them. Spread them on a baking sheet. Toast at 350 degrees for 6 to 8 minutes, stirring occasionally.

2. For glaze, combine sugars and water in a heavy skillet.

3. Over medium heat, stir mixture until sugars are melted. Then bring to a boil and boil over medium to high heat until soft ball stage, that is when a candy thermometer reaches 238 degrees or a soft ball forms when a small amount of mixture is dropped into cold water.

4. Add vanilla.

5. Add walnuts and stir until they are coated with glaze.

6. Spread nuts on waxed paper. Let stand until firm.

7. Store in an airtight container.

Tip: You may use this same recipe for pecans, brazil nuts or hazelnuts or filberts.
