Gooseberry Tart

Preparation Tips:1. Top and tail the gooseberries.
2. Sift the flour and salt into a bowl.
3. Rub in the margarine and lard and mix to a stiff dough with cold water.
4. Roll out and use to line an 8-inch flan dish.
5. Trim the edge.
6. Fill with the gooseberries.
7. Cut the pastry trimmings into strips and twist them across the flan.
8. Bake in a moderately hot oven (400 degrees F) for 30 to 35 minutes or until golden brown.
9. Sprinkle with the sugar and lemon rind and serve.
Serves 6. Freezes well.
Cook's Tip: If you have an egg white left over, seal the pastry before adding the fruit by brushing it with the egg white.
