"Apple Glazed Leg of Lamb"

Serving Size: Makes 16 (3 ounce) servings

6 ounce canfrozen apple juice concentrate, thawed and undiluted
1/2 cupcider vinegar
1/4 cuphoney
1 tablespoonlow sodium soy sauce
1 teaspoonminced fresh rosemary
5 poundleg of lamb, well trimmed
 Vegetable cooking spray
2 cups2 inch julienne cut carrots
2 cups2 inch julienne cut turnips
1/4 poundfresh spinach leaves, trimmed

Preparation Instructions:

Combine first 5 ingredients in a large nonaluminum dish; add lamb, turning once to coat. Cover and marinate in refrigerator 8 hours, turning lamb occasionally. Preheat oven to 450 degrees. Remove lamb from marinade, reserving marinade. Place lamb on a rack coated with cooking spray, and place rack in a shallow roasting pan. Brush lamb with reserved marinade. Insert meat thermometer into thickest part of lamb, making sure that it does not touch bone. Reduce heat to 350 degrees. Bake lamb 2 hours or until meat thermometer registers 140 degrees (rare) or 160 degrees (medium), basting frequently with marinade. Remove lamb from oven, and let stand about 15 minutes before slicing.

Arrange carrots in a vegetable steamer over boiling water; cover and steam 1 minute. Add turnips; cover and steam 2 minutes or until crisp tender. Drain vegetables well. Place lamb on a spinach lined platter; arrange carrots and turnips around lamb. Bring any remaining marinade to a boil, and cook 1 minute. Serve marinade with lamb. 16 (3 ounce) servings.

Per serving: 206 calories; 25 g protein; 11.9 g carbohydrates; 6.1 g fat; 85 mg cholesterol; 120 mg sodium.
