Serving Size: Makes 1 serving

AmountIngredient
2 tablespoonsbulgur wheat
2 tablespoonsshredded carrot
2 tablespoonssliced celery
1/2 teaspooninstant chicken bouillon granules
1/4 teaspoondried minced onion
1/8 teaspoondried tarragon, crushed
1small pork rib chop, cut 1/2 inch thick (about 4 ounces)
1 cupfrozen broccoli cuts
1 tablespoonketchup
2 teaspoonsdry red wine

Preparation Instructions:

Combine bulgur, carrot, celery, bouillon, onion, tarragon, and 1/4 cup water; bring to boiling. Pour into a shallow individual baking dish. Top with pork chop and broccoli. Cover tightly with foil. Bake, covered, in a 375 degree oven 45 minutes or till meat is done. Combine ketchup and wine; spread over chop. Bake, uncovered, 5 minutes. Serves 1.

Per serving: 347 calories; 21 g protein; 25 g carbohydrates; 18 g fat; 56 mg cholesterol; 430 mg sodium.
