Serving Size: Makes 4 servings

4cooking apples
1/2 cupcranberry juice cocktail
2 tablespoonshoney
1/8 inch slicegingerroot
Banana Cream: 
1egg white
1 tablespoonhoney
1large banana
3 tablespoonslemon juice

Preparation Instructions:

Core apples. Slice each apple crosswise into thirds. Arrange apples in a 12 x 7 1/2 x 2 inch microwave safe dish.

Combine juice, honey and gingerroot; pour over apples. Micro cook,covered, on 100% power (high) 5 to 7 minutes or till tender; turn dish, rearrange apples, and spoon liquid over apples once during cooking. Serve immediately with Banana Cream. Makes 4 servings.

Banana Cream: One hour or less before serving, in a small mixer bowl beat egg white till frothy. Gradually add honey, beating till well combined. Mash banana to make 1/2 cup; stir in lemon juice. Add to egg white mixture. Beat to stiff peaks. Serve immediately.

Per serving: 175 calories; 1 g fat; 2 g protein; 45 g carbohydrates; 0 mg cholesterol; 15 mg sodium; 3 g fibre.
