Serving Size: Makes 4 servings

AmountIngredient
1 poundblack pudding
2large cooking apples
1 ouncebutter
1 tablespooncooking oil
 Salt and pepper

Preparation Instructions:

Cut the black pudding into 4 pieces across, then cut each piece in half lengthways, removing the skin at the same time. Peel and core the apples and cut into 1/2 inch thick wedges. Heat the butter and oil in a frying pan and fry the black pudding for 3 to 4 minutes on each side. After a couple of minutes cooking, add the apple wedges and cook them, turning once or twice. Season the apple with salt and pepper and serve hot. Serves 4.
