Serving Size: Makes 8 servings

AmountIngredient
1 1/2 cupsgrated sharp cheddar cheese
2 tablespoonscornstarch
1/2 teaspoonpaprika
Dashcayenne pepper
1 teaspoondried thyme leaves
3egg whites
1/3 cupcracker crumbs
1/3 cupgrated almonds
 Oil, for frying

Preparation Instructions:

1. In a bowl, combine the cheese, cornstarch, spices and herbs.

2. Beat egg whites until stiff peaks form.

3. Carefully stir egg whites into cheese mixture, blending to mix.

4. Shape mixture into small even balls with two teaspoons.

5. Combine cracker crumbs and almonds on a plate.

6. Roll balls in crumb mixture.

7. Heat oil slowly in a deep heavy pan or skillet.

8. Deep fry a few balls at a time in hot oil. Drain on paper towels.

9. Repeat with remaining batter.

10. Serve puffs hot as appetizers.
