Preparation Instructions:1. Beat together eggs and water; season with salt and pepper.
2. Heat an 8 inch skillet over medium high heat. Pour in egg mixture. As mixture sets at the edges, with spatula, gently push cooked portions toward the center or lift edges to allow uncooked egg to flow underneath.
3. When egg is almost set on surface but still looks moist, cover half of the omelette with your choice of filling. Slip spatula under the unfilled side, fold the omelette in half and slide onto a warm plate. Makes 1 serving.
Per serving: 247 calories; 12.4 g protein; 0.6 g carbohydrates; 21.4 g fat.
Note: The use of water is preferred when making omelettes. The water turns to steam, producing a light, airy omelette.
