Fork Mashed Potatoes with Mustard and Basil

Serving Size: Makes 6 servings

2 1/2 poundssmall new potatoes
1/3 cupchopped fresh basil
1/3 cup (approx.)sour cream or buttermilk
4 teaspoonsDijon mustard
1/2 teaspoonsalt
1/4 teaspoonpepper

Preparation Instructions:

In large saucepan of boiling salted water, cook potatoes for 20 minutes or until tender. Drain; place in shallow bowl. Cut into quarters (not necessary to peel, but peel if desired). Add basil, sour cream, mustard, salt, and pepper. Roughly mash with fork or lightly with potato masher; there should be some lumps remaining. Serve immediately. Makes 6 servings.

Per serving: 202 calories; 2 g fat; 42 g carbohydrates; 5 g protein; 3 g fibre.
