"Everyone's Favorite (Oatmeal Chocolate Chip) Cookies"

One Smart Cookie Julie Van Rosendaal
Serving Size: Makes 1 1/2 dozen cookies

Preparation Instructions:Preheat oven to 350 degrees.
In a large bowl, beat margarine and brown sugar until well combined - it will have the consistency of wet sand. Add egg whites and vanilla and beat until smooth.
In a medium bowl, combine flour, oats, baking soda and salt. Add to the brown sugar mixture and stir by hand just until combined. Stir in chocolate chips.
Drop spoonfuls of dough about 2 inches apart on a cookie sheet that has been sprayed with nonstick spray. Flatten each cookie a little with your hand. Bake for 12 to 15 minutes, just until pale golden. Do not overbake. Transfer to a wire rack to cool. Makes 1 1/2 dozen cookies.
Per cookie: 167 calories; 4.4 g fat; 30.6 g carbohydrates; 0.8 mg cholesterol; 148.6 mg sodium; 1.2 g fiber.
Variations:
Cranberry White Chocolate Oatmeal Cookies: Replace chocolate chips with 1 cup chopped white chocolate, and add 1/2 cup dried cranberries. Adds 1.4 g fat per cookie. Or if you like, replace the chocolate with an equal amount of white chocolate and the fat content will remain the same.
Oatmeal Scotchies: Replace chocolate chips with an equal amount of butterscotch chips. Fat content remains the same.
Double Chocolate Oatmeal Cookies: Replace 1/4 cup of the flour with 1/4 cup cocoa. Proceed as directed. Add fat is nominal.
Oatmeal Chocolate Chip & Caramel Chunk Cookies: Chop 20 caramels into quarters with oiled scissors or a knife. Add the caramels along with th chocolate chips and bake as directed. Adds 0.7 g fat per cookie.
