Raisin Cream Cheese Pastries

AmountIngredient
3 cupssifted all-purpose flour
1/2 teaspoonsalt
1 cupshortening
3 tablespoonsice-cold water
1 teaspoonvinegar
Filling
12 ouncescream cheese
2eggs
1/2 cupraisins
1 tablespoonlemon rind
1 tablespoonlemon juice
1egg, beaten, for brushing
Powdered sugar, optional

Preparation Tips:

1. Place sifted flour and salt in a bowl.
2. With a pastry cutter, cut in the shortening until mixture resembles cornmeal.
3. Add the water and vinegar. Stir with a fork until dough clings together. Wrap in plastic wrap. Let rest in the refrigerator for 1 1/2 hours.
4. Prepare filling: Stir the cream cheese until soft. Add eggs, raisins, lemon rind and lemon juice. Let cool.
5. On lightly floured surface, roll the dough out.
6. Form 4 rectangles, 6-by-18-inches. Place filling in the middle. fold dough over to cover the filling.
7. cut some slits in dough, deep enough for steam to escape. Brush with egg. Place on ungreased cookie sheet.
8. Bake at 375 degrees for about 25 minutes or until golden brown. Cut in pieces to serve. Dust with powdered sugar, if used.
