"Artichoke Spread"

Serving Size: Makes 1 1/2 cups

6 ounce jarartichoke hearts
1/2 cupgrated Parmesan cheese
1/2 cupmayonnaise
1 large clovegarlic, peeled and minced

Preparation Instructions:

1. Preheat the oven to 350 degrees. Drain the artichoke hearts (reserve the oil and use it in a salad dressing), and chop them coarsely.

2. In a mixing bowl, combine the artichokes, cheese, mayonnaise, and garlic. Using a rubber spatula, scrape the mixture into an ungreased 1/2 quart baking dish and bake, uncovered, for 20 minutes, or until bubbly and slightly browned. Serve hot, warm, or chilled as a spread for crackers or toast rounds. Makes 1 1/2 cups.

Per tablespoon: 50 calories.
