"Tuna Steaks Baked with Spices"

Serving Size: Makes 4 servings

AmountIngredient
4tuna steaks, each weighing about 6 ounces
2 teaspoonscoriander seeds
2 teaspoonscumin seeds
1 teaspoondried crushed chilies
1 teaspoonblack peppercorns
Sea salt
Finely grated rind and juice of 1 large lemon

Preparation Instructions:

Preheat the oven to 375 degrees. Cut four pieces of nonstick baking paper, each large enough to hold one tuna steak in a package easily. Place a tuna steak on each piece of paper. Put the seeds, crushed chilies, peppercorns, and salt in a mortar. Using a pestle, crush the spices to break them up a little. Stir in the lemon rind. Scatter the spice mixture evenly over the fish steaks, then drizzle a little lemon juice over each one. Fold the paper over the fish and twist the edges to secure, making four packages. Transfer the packages to a baking tray and bake for about 20 minutes, until the fish is cooked and the flesh flakes when tested with a fork. Place the unopened package on a warmed serving plate and serve immediately with cooked fresh vegetables such as new potatoes, baby corn, and carrots. Makes 4 servings.
