Serving Size: Makes 4 servings

AmountIngredient
2 tablespoonsred wine vinegar
1 clovegarlic, minced
1 tablespoonDijon mustard
2 teaspoonsliquid honey
1/2 teaspoonseasoned salt
1 teaspoonseasoned pepper
1 poundboneless, skinless chicken breasts
8 cupsromaine lettuce, torn into bite size pieces
1/2 eachred and green bell pepper, cut into slivers

Preparation Instructions:

In a small bowl, combine vinegar, garlic, mustard, honey, seasoned pepper and salt. Pour half the marinade over chicken breasts (in a non metallic bowl) and marinate in refrigerator for 30 to 45 minutes. Refrigerate remaining marinade in a separate container. Grill or broil chicken 4 minutes on each side, until golden and cooked through. Discard any marinade used for chicken. Cool chicken and slice. Line individual plates with lettuce and peppers. Arrange chicken on top. Drizzle salads with remaining dressing.
