Preparation Instructions:In a glass measuring cup, pour 1 cup boiling water over tea bags; steep for 5 minutes. Remove tea bags, squeezing as much liquid as possible back into the cup. If needed, add additional boiling water to measure 1 cup.
Place bulgur wheat into a bowl; add mint tea and let stand until all liquid is absorbed, stirring occasionally.
Add tomato, cucumber, Feta, green onions, olives and mint, turning to mix well. Stir in olive oil and season to taste. Serve over a bed of lettuce. Serves 4.
