Chocolate-Chunk Cookies

Preparation Tips:Place chocolate in refrigerator to chill while making cookie batter. Preheat oven to 375 degrees. Mix flour, baking powder, and salt in a medium-sixe bowl with a wire whisk until light and thoroughly combined. (Using a wire whisk to blend the dry ingredients makes sifting unnecessary in this case.) Set aside. Combine butter, granulated sugar, brown sugar, milk, vanilla, and eggs in a large bowl. Cream the mixture with a large wooden spoon or an electric mixer. It will appear to be curdled, but not to worry. Gradually add flour mixture, beating well after each addition. Remove chocolate from refrigerator. Place on a cutting surface and chop into 1/4 inch pieces with a long, sharp knife. Immediately stir chocolate chunks and nuts (if using) into cookie batter. Drop cookie batter by the measuring tablespoonful onto ungreased cookie sheets, leaving about 2 inches between each cookie. Bake for 9 to 11 minutes, or until cookies are golden. Remove cookie sheets from oven and eat some of the cookies right away. Cool the remainder on wire racks, then store in a tightly covered container. Makes about 40 cookies.
