"Apricot Ginger Slush"

Serving Size: Makes 4 cups or about 4 servings

AmountIngredient
2 cupsapricot nectar
2 teaspoonsminced fresh ginger
2 cupssparkling mineral water, soda water or ginger ale

Preparation Instructions:

In food processor or blender, combine apricot nectar and ginger; blend until smooth. Pour into ice cube trays and freeze until almost solid (or freeze solid and let thaw slightly before using). In food processor or blender, process cubes (in batches if necessary) until slushy, adding a little water if needed. To serve, fill glasses two thirds full of slush. Top up each glass with sparkling water, mineral water or ginger ale.

Per 1 cup: 75 calories; 0 g fat; 19 g carbohydrates; 0.5 g protein.
