Serving Size: Makes 2 loaves

1 1/2 cupsvegetable oil
3large eggs
2 cupsmashed ripe banana
8 ounce cancrushed pineapple, drained
2 teaspoonsvanilla extract
3 cupsall purpose flour
2 cupssugar
1 teaspoonbaking soda
1 teaspoonsalt
1 teaspoonground cinnamon
1 cupflaked coconut
1 cupchopped macadamia nuts

Preparation Instructions:

Preheat oven to 350 degrees. Grease and flour 2 (9 x 5 inch) loaf pans.

In a large bowl, beat oil and eggs with an electric mixer at medium speed. Beat in bananas, pineapple, and vanilla until combined.

In a large bowl, combine flour, sugar, baking soda, salt and cinnamon. Gradually add to oil mixture, beating until combined. Stir in coconut and nuts.

Pour batter into prepared loaf pans. Bake 50 to 55 minutes, or until a tester inserted in center comes out clean. Cool. in pans 10 minutes. Remove from pans and cool completely on wire racks.
