"Lime Chipotle Butter"

Serving Size: Makes 1/2 cup

Preparation Instructions:Place butter in a small bowl. Grate in lime peel. Stir in Tabasco until evenly mixed. Scrape onto a piece of plastic wrap. Form into a log and tightly roll up. Twist ends and refrigerate just until firm or up to 1 month. To use, slice butter into small rounds. Makes 1/2 cup.
Per tablespoon: 102 calories; 11.5 g fat; 0.1 g protein; 0.1 g carbohydrates; 125 mg sodium; 0.1 g fibre.
Variations: Replace lime and Tabasco with: 2 teaspoons wasabi paste and 1 teaspoon finely chopped fresh mint; 2 teaspoons honey and 1 teaspoon curry paste; 2 teaspoons hot chili garlic sauce.
